Long, cynlindrical, dark purple fruits - four or more on every plant - are what you can expect when you grow this beautiful eggplant. The plants are 2 to 3 feet tall and grow well in containers.
Start seeds indoors 8 to 10 weeks before planting outdoors, sowing 2 seeds per pot or cell. Harden off seedlings by putting them outside during the day for 1 week before transplanting. Transplant seedlings to the garden 18-24 inches apart when nighttime temperatures remain above 55F. Enrich the soil with compost. Use plastic mulch to retain heat in the soil.
To avoid diseases, don't plant where eggplants or tomatoes have grown in the last two years. Water regularly to keep soil evenly moist. To harvest, cut fruit from the plant when the skin is glossy. Leave some stem attached to each fruit. Eggplants are ripe if the flesh doesn't spring back when you gently press the side of the fruit with your thumb.
