A bit like a cabbage-flavored apple, White Vienna kohlrabi's firm, fine-textured bulbs are mild and sweet. Makes a tasty low-cal snack when sliced raw, as the foundation for "kohl-slaw", or steamed.
For an early spring crop, start indoors 4 to 6 weeks before planting outdoors, planting 2 seeds per pot or cell. Harden off seedlings by putting them outside during the day 1 week before transplanting to the garden 10-12 inches apart. For later crops, plant seeds directly in the garden. Plant by July or August for a fall harvest. Before planting enrich the soil with compost.
To avoid disease problems, don't plant where kohlrabi or related plants grew within the last 2 years. Water regularly. Harvesting: For peak flavor and texture, cut off plants at ground level when bulbs are 2 to 3 inches across. Trim leaves and taproot from the bulb. Store bulbs in the refrigerator for up to a month.
